I have no idea what the inventor of this dish was thinking, but he must have been a genius. Because today, drunken shrimp is a very popular dish in China. In the US it would have been served in a reality show like Fear Factor. The shrimp are placed in a bowl of strong liquor, which slows them down. That is what you call rip-roaring drunk shrimp. And that’s how you serve them. It’s easy to get one off the bowl because the shrimp is soused. You then decapitate and swallow. You may feel the movement of the tail on your tongue.
